Lyonnaise Maine Potatoes

Ingredients

Instructions

  1. Slice the cold boiled potatoes endwise, then crosswise, making them like dice in small squares.
  2. Heat butter or good pan drippings in a frying pan and fry the onion until it begins to look yellow.
  3. Put in the diced potatoes and sprinkle well with salt and pepper. Stir well and cook about 5 minutes, taking care that you do not break them. They must not brown.
  4. Just before taking up, stir in the parsley. Serve very hot.
