8-10 Round White or Yukon Gold Maine Potatoes, boiled
1 Small Onion (Finely Chopped)
1Tablespoon Minced Parsley
Butter or good pan drippings for frying
Sat and Pepper (To Taste)
Instructions

Slice the cold boiled potatoes endwise, then crosswise, making them like dice in small squares.

Heat butter or good pan drippings in a frying pan and fry the onion until it begins to look yellow.

Put in the diced potatoes and sprinkle well with salt and pepper. Stir well and cook about 5 minutes, taking care that you do not break them. They must not brown.

Just before taking up, stir in the parsley. Serve very hot.
