6 Medium Maine potatoes (peeled and sliced thinly)
2 pie crusts (your favorite)
1 small onion (diced)
4cloves garlic (chopped)
1 1/2teaspoons salt
1teaspoon black pepper
1 egg (slightly beaten)
1cup sour cream
1tablespoon chives (Chopped)

Preheat oven at 400 degrees.

Boil potatoes in water for 15 minutes; drain and set aside. Line a 9-inch pie plate with bottom crust. Put a layer of potato slices in bottom of pie. Sprinkle with one third of onion, garlic, salt and pepper mixture.

Put two more layers of potatoes and onion mixture into pie.

In separate bowl, stir together egg, sour cream and chives. Pour over potatoes.

Top with top crust. Cut slits in the top and bake for 35-40 minutes, until crust is golden.
